Almonds are the seeds of the Almond tree. They can be used raw, blanched or roasted.

You need to be fully aware of where almonds that you purchase are processed. California does not allow raw almonds to be sold. However, they still allow the word "Raw" to be used on the label, even after they have been steam-pasturized. But they are no longer raw if they have been steam-pasturized. The California law, for example, also allows that almonds can be "pasteurized" by chemically treating them with propylene oxide (PPO), which is classified by the EPA as a “Group B2, probable human carcinogen."

Ask questions when you're buying almonds, especially raw ones. Organic almonds will not be treated with PPO. Smaller independent health food stores are more likely to actually be knowledgeable on how their products are dealt with prior to arriving in the store.

When almonds are in a premade product, you have no way of knowing how it was processed. If you choose an item with organic almonds, you can at least avoid PPO.
