A tangy and creamy dressing that's very versatile and can be made with mayo or Greek yogurt and with premade Italian seasoning or single herbs.

This versatile dressing can be made with store bought mayo, Homemade Mayonnaise or Greek yogurt, and either single spices or Homemade Italian Seasoning.

Use all organic ingredients. Ensure all the dried spices are labeled certified gluten free and any packaged items are labeled gluten free.

Creamy Italian Dressing
A creamy dressing that's versatile and you can make it with jarred mayo, Homemade Mayonnaise or Greek yogurt and with Homemade Italian Seasoning or single herbs.
Prep time: 15 minutes Makes: 3/4 cup Difficulty: Medium

Ingredients:
1 to 2 tablespoons White wine vinegar
1 to 2 tablespoons Extra virgin olive oil
1/2 cup Homemade Mayonnaise or plain Greek yogurt
1 tablespoon Lemon juice, fresh
1 tablespoon Homemade Italian Seasoning (see notes below if you don't have any)
Sea salt, to taste
Black pepper, to taste
Optional Ingredients:
1 tablespoon Honey or maple syrup (skip for sugar free)
1 clove Garlic , minced (especially if your Italian seasoning doesn't have garlic in it)
3 tablespoons Fresh grated Parmesan cheese
Substitutions and Notes:
  • Italian Seasoning: If you don't have any premade Italian seasoning, you can combine 1 teaspoon each of dried leaf oregano, basil, thyme and parsley (or a bit less than 1 teaspoon). Then you can also use fresh garlic.
  • Dairy Free: Use dairy free mayo instead of Greek yogurt.
  • Egg Free: Make this with egg free mayo or use Greek yogurt.
  • Sugar Free: Skip using honey or maple syrup.
  • Homemade Mayonnaise: If using Homemade Mayonnaise, be sure your mayonnaise is properly made and not separating at all. If it separates while making this dressing, it will need a really good shake before serving, though it may not be as nice as you expect and won't look as nice if it sits for any time. If it separates, let chill in the fridge for an hour, then shake it to combine again, and return to the fridge for another hour, it may recombine, at least for a longer amount of time.
Directions:
  • Combine the mayo or Greek yogurt, Italian seasoning or single spices, Parmesan cheese and honey.
  • Add vinegar and oil and blend. If it's still too thick, you can add 1 extra teaspoon each of oil and vinegar at a time until you get your desired consistency. Or if using Greek yogurt, and it's too thick, you could instead add a teaspoon of cream at a time until you get the desired thickness.
  • Add salt and pepper to taste.
  • Let stand in the fridge for at least an hour for flavors to blend and dressing to set a bit. If using Homemade Mayonnaise, it really does need to set in the fridge to chill again for at least an hour.
  • Can be stored in a well sealed container in the fridge for about 5 days. Stir or shake before serving.

Serve on a fresh green salad or as a dip for fresh veggies or Homemade French Fries or Potato Chips.
