Homemade ice cream sweetened with Stevia. When you still want some sweet treats, and are limiting your sugar, Stevia is a great alternative. This uses an ice cream maker.

This uses an ice cream maker.

With Stevia, a little goes a long way. Normally, this recipe will require 1 tablespoon of stevia extract powder. If the ice cream is not sweet enough for your taste, you can add some blended fruit also, such as pineapple.

Remember, your taste buds will adjust to less sweetness over time.

This recipe calls for stevia. The stevia I'm referring to is the concentrated stevia extract or powder with absolutely no other fillers or ingredients, preferably organic. This is a processed product, and some people get a negative reaction to it, or don't like it. But it's worth trying it if you're looking to reduce your sugar intake. Avoid using the stevia blends that are popular, as they contain a lot of fillers, additives, flavorings and sugar, that can cause digestive upset.

You can also use organic dried and ground stevia leaf, or make a sweet water with it by brewing it like coffee and then reducing the liquid by boiling it.

Use all organic ingredients, and ensure any packaged ingredients are labeled gluten free.

Serve the ice cream with homemade Raspberry Sauce or Mango Sauce.

Ingredients:
1 cup Whole full fat milk
1 tablespoon Stevia extract powder (no fillers or additives)
Pinch Sea salt
2 cups Heavy cream
1 to 2 teaspoons Pure vanilla extract
Directions:
  • In a medium bowl, use a hand mixer on low speed or whisk to blend the milk, Stevia and sea salt until the stevia is dissolved. Stir in the heavy cream and vanilla. Cover and refrigerate for 1 to 2 hours, or overnight.
  • Turn the ice cream maker on; pour the ice cream mixture into a frozen freezer bowl and let it mix until thickened, about 30 to 35 minutes. The ice cream will have a soft, creamy texture. If you want a firmer consistency, transfer the ice cream to an airtight container and place in the freezer for about 2 hours. Remove from the freezer about 15 minutes before serving.

Serve with homemade Raspberry Sauce or Mango Sauce.
