Delicious scrambled eggs and cheese baked in muffin pans and filled with your favorite ingredient combo - ham and tomato; sausage and red peppers; broccoli and tomatoes; etc.
These tasty gluten free egg "muffins" are great when you need to serve a crowd or if you simply want to serve your eggs a different way.

These delicious scrambled egg "muffins" are a nice way to serve eggs with a bit of a twist. You can customize them with your favorite fillings, just the way you like. Try out different cheeses for a bit of a twist, such as grated Pepper Jack or Extra Old Aged Cheddar.
These egg cups are great served with Grain Free Pancakes and Raspberry Sauce for a delicious breakfast everyone will love.

• 12 large Eggs • 1/2 teaspoon Sea salt, or to taste • 1/4 teaspoon Black pepper, or to taste • 1/2 clove Garlic, minced (or 1/4 teaspoon garlic powder) • 1 cup Cheddar or Mozzarella cheese, shredded • 2 tablespoons Butter or coconut oil, for greasing muffin pan • 1 to 1 1/2 cups Fillings * see below Filling Ingredients:Choose 2 or 3 of your desired ingredients. You will need about 1 to 1 1/2 cups in total. You can alter the amounts of each ingredient to suit your personal taste.• 3/4 cup Cooked ham, chopped • 3/4 cup Cooked breakfast sausage, crumbled • 3/4 cup Cooked bacon, chopped • 2 to 3 tablespoons Finely diced onions • 2 to 3 Green onions, chopped • 1/4 cup Red bell pepper, chopped small • 3/4 cup Cooked broccoli, in small florets • 1/4 cup Tomatoes, deseeded and use only dry part of tomato

- Preheat oven to 350 degrees F.
- Prepare meat that you are using. Meat should be precooked. If it's not already cooked, then do that now. Cut into small pieces.
- Chop all vegetables that you're using. Smaller pieces work best. If using tomatoes, remove the seeds and any liquidy portions of the tomato (use for something else you're cooking). The dry portions work best, such as the outer sections next to the skin. If using bell peppers, remove the skins and the whitish inside ribs and discard. If using left over cooked broccoli, treat it carefully so it doesn't turn to mush. If using uncooked, then cook it for just enough time for the floret parts to be soft, usually no more than a couple minutes in boiling water. Since there won't be much stem, it will cook fast. It will cook some more with the eggs.
- Grease a regular sized muffin pan generously with butter or coconut oil. Be generous with this so the eggs cups won't stick to the pan. This recipe will make 12 to 15 egg cups, depending on the size of your eggs, the size of the muffin pan, and if you're adding a generous amount of filling ingredients or extra cheese.
- In a large bowl, beat eggs until frothy. Add salt, pepper and garlic and blend. Add shredded cheese and mix.
- Combine the filling ingredients together and stir to combine. Add to the egg mixture and mix. If using broccoli, mix just enough to blend, so the broccoli doesn't fall apart.
- Scoop into prepared muffin pans to about 1/2 to 3/4 full. Bake in preheated oven for about 20 to 25 minutes, until egg is cooked all the way through.
- Remove from oven and serve immediately.
