Tangy guacamole is perfect served with tortilla chips and goes great with a Mexican dinner or Homemade Chili.

Roma tomatoes work great because they are less juicy and allows the guacamole to stay nice and thick.
When buying avocados find those that are soft and ripe, but not overripe.
Use all organic ingredients. Ensure all the dried spices are labeled certified gluten free and any packaged items are labeled gluten free.

Ingredients:

• 3 Ripe avocados • 3 tablespoons Fresh lime juice • 1/2 White onion, diced • 1 Roma tomato, seeded • 1/2 cup Fresh cilantro, finely chopped • 1/2 teaspoon Sea salt • 1/4 teaspoon Black pepper -
Substitutions and Notes:
- Lime Juice: You can use fresh lemon juice if you don't have limes. Always use fresh lemons or limes.
- Cilantro: If you don't have or don't like cilantro, you can use celery leaves or parsley
- Tomatoes: You can use other tomatoes. The secret is to seed them and don't use the really wet part, as it will make the guacamole too runny.
Directions:

- Chop the onions, tomatoes and cilantro.
- Mash the avocados with a fork or potato masher. Make it so it's not smooth. You want some nice chunks in it.
- Squeeze the limes and put on top of avocados. The lime juice will prevent the avocados from turning brown.
- Add the tomatoes, onions, cilantro, salt and pepper and blend.
- Serve immediately.
- Best served within a day of preparing. It can be stored in the fridge. Cover with plastic wrap directly pressed into the guacamole so it doesn't turn brown.

Serve with tortilla chips or with Homemade Chili.
