This soup is creamy and delicious and makes a nice light meal with a salad for dinner or lunch.

You can make your own Homemade Chicken Stock, which is easy and so delicious. Use all organic ingredients.

You can use any type of squash that you like, such as acorn or butternut.

Use the fresh seeds from the squash to make Roasted Pumpkin Seeds for a snack later on, or even sprinkle them on the soup.

Use all organic ingredients, and ensure any dried spices are labeled certified gluten free.

Ingredients:
1 tablespoon Butter or coconut oil
1 large Onion, chopped
4 cloves Fresh garlic, crushed
2 to 4 pieces Fresh ginger, thumb sized, chopped
4 cups Homemade Chicken Stock
2.5 to 3 pound Squash, peeled, seeds removed, and cubed
Salt, to taste
Fresh ground black pepper, gluten free, to taste

Substitutions and Notes:
  • Chicken stock: You can use any homemade stock, such as beef or vegetable, if you prefer. If using store bought broth or stock, ensure it's labeled gluten free.
  • Dairy free: In place of the butter you can use coconut oil, palm oil or Homemade Lard.
Directions:
  • Melt butter in frying pan. Add onions, garlic and ginger and cook until just starting to turn brown.
  • Add chicken stock to a large pot. Add cubed squash and onion mixture. Season with salt and pepper. Bring to a boil. Reduce heat and simmer until the squash is cooked, about 20 to 30 minutes.
  • Remove from heat and cool until safe to handle. Add to a blender, and blend until smooth. Adjust seasoning if desired.
  • Reheat to bring to a hot serving temperature.

Serve with a drizzle of cream and Roasted Pumpkin Seeds you can make from the seeds of the squash, if desired.
