These tasty mushroom meatballs are rich and creamy, and loaded with fresh mushrooms. They're perfect served with some pan fried potatoes and a salad for a delicious meal.

It's easy to double the meatball ingredients and freeze 1/2 of them for another day, uncooked.

The sauce is best served the same day it's made. Sauces made with cream can separate when reheated. Make just the right amount for your dinner.

Use all organic ingredients, and ensure any dried spices are labeled certified gluten free, and any packaged items are labeled gluten free.

Ingredients:
Meatballs:
1 Egg
1/3 small stalk Celery, finely diced (3 tablespoons)
1/2 small Onion, finely diced (1/4 cup)
1 clove Garlic, minced
1/2 teaspoon Sea salt
1/2 teaspoon Ground pepper
1 teaspoon Cumin
1 pound Ground beef or pork, or a combination of both
Mushroom Sauce:
2 tablespoons Butter or meat fat
2 tablespoons Coconut oil
2 cloves Garlic, finely chopped
1/2 small Onion, chopped (1/4 cup)
2 cups Mushrooms, sliced
3/4 cup Homemade Beef Stock or white wine, or a combination of both
1 tablespoon Fresh lemon or lime juice
1 cup Heavy cream
1/2 teaspoon Sea salt, or to taste
1/2 teaspoon Ground pepper, or to taste
Substitutions and Notes:
  • Ground beef and pork: You can use another type of ground meat of your choice, such as chicken. You can also combine 1/2 ground beef and 1/2 ground pork. Don't use lean meat; the meatballs will be dry and will burn too easily, especially when pan fried.
  • Coconut oil: Choose organic coconut oil. You can use processed oil, as it has less of a coconut flavor, but be sure to avoid oil that has been processed with chemicals.
  • Coconut oil and butter: Butter produces better browning of the sauce ingredients, but tends to burn. Coconut oil doesn't brown as well. However, when used together, an excellent browning can be achieved, and it won't burn. This combination is excellent for this kind of cooking. If using a meat fat in place of the butter, you can skip the coconut oil, if desired.
  • Beef stock: If using packaged beef stock, be sure that it's labeled gluten free. If possible, find a brand that doesn't have extra additives, as some of them can cause digestive upset.
Directions:
  1. The meatballs can be baked in the oven or pan fried.
  2. In a small bowl combine the eggs, celery, onions, garlic, salt, pepper and cumin and mix well.
  3. Add the ground meat to egg mixture, and combine well.
  4. Form into about 20 meatballs.
Baked Meatballs:
  1. Place prepared meatballs in a baking pan, and bake in a preheated 350 F oven. Bake for about 35 to 45 minutes. There may be a mesh type structure that forms around the meatballs. This is normal and it's from the eggs. It's perfectly fine to eat, just toss it into the mushroom sauce with the meatballs.
Pan Fried Meatballs:
  1. Heat a wide saucepan on medium high. Place meatballs in pan and fry until browned. Be sure they aren't crowded. Flip and fry the other side. Check that they are cooked all the way through. You may need to cook them on their sides as well, if they are large. When done, remove from pan and set aside until sauce is ready.
Mushroom Cream Sauce:
  1. Heat butter and coconut oil in a wide saucepan. When melted and starting to bubble, add the onions and garlic. Fry until the onions are soft, about 10 minutes. Add mushrooms and cook for about 10 to 15 minutes.
  2. Add lemon juice to to the broth / wine mixture. Add about 1/4 cup of the broth mixture to the mushrooms. Cook over medium heat until liquid is reduced and it's starting to thicken. Repeat twice more, with the remaining broth mixture, 1/4 cup at a time.
  3. Lower the heat to low, and add the cream. Stir and cook slowly until it boils. Boil very gently for about 10 to 15 minutes. Season with salt and pepper to tast.
  4. Add meatballs to the sauce and toss to coat the meatballs in sauce. Sprinkle with some fresh chopped parsley, if desired.
