Date sugar is actually just roasted or dehydrated and ground dates. It's easy to make yourself.

Since date sugar is a whole food, and contains much more than just sugar, such as the original fiber, it does not dissolve. This makes it suitable when a recipe does not require the sugar to dissolve.
In this recipe, I'll show you how to roast the dates, though you can also dehydrate them in the sun or in a dehydrator. If you want to use a dehydrator, spread dates out on the trays and dry them at about 105° F for two days.

• 4 ounces (100 g) Dates, pitted

- Preheat oven to about 250° F (120° C).
- Cut dates in half, and remove pits, if any.
- Lay on a baking tray. Keep space between them; you don't want them all bunched up.
- Place in oven and bake for about 1 hour. Stir about every 15 minutes. As they start to darken, watch them closely, so they don't burn. They will be very dark when done, but not quite black. The time needed will vary depending on the moisture content. They will still be soft in the oven when they are ready. When they start darkening, take one out of the oven, and let it cool completely. If it is hard, and snaps when broken, they are ready.
- When they are done, remove them from the oven and let them cool completely.
- Place them in a sturdy blender, food processor or coffee style grinder. Grind until they are a fine powder.
- Store in an air tight container. Date sugar will stick together, so break off the amount you need, and separate with a fork.
